One Pot Dishes

Perfect for freshers’ fortnight!

Next-Level Pesto Pasta

Serves 2

  • 150g farfalle pasta
  • 2-3 tbsp green pesto
  • 2-3 tbsp parmesan cheese
  • ½ tsp salt

Optional

  • 1-2 tsp pine nuts
  • 50g cherry tomatoes, sliced
  • 100g cooked protein (e.g. tofu, chicken)
  • 100g roast peppers (you can buy them in jars)

Steps

  1. Season your pasta water with salt, bringing it to the boil. Cook the pasta according to the packet instructions.
  2. Add pesto sauce, generously mix in the optional ingredients.

Stir fried egg and tomato

  Serves 2

  • 3 medium eggs
  • 4 medium tomatoes, sliced
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tsp oil

Steps   

  1. Crack the eggs into a bowl, and whisk using a fork. 
  2. On a medium heat, add the oil to a pan, and pour the eggs once the oil is hot, stirring to scramble
  3. Add the tomatoes, cooking until soft. Season to taste.

Tuna and Sweetcorn Pasta Salad

Serves 2

  • 150g penne pasta
  • 1 tin sweetcorn
  • 1 tin tuna
  • 100g cherry tomatoes, sliced
  • 1 packet fresh basil leaves, washed

Sauce

2-3 tbsp mayonnaise or another sauce of your choice

Steps

  1. Season your pasta water with salt, bringing it to the boil. Cook the pasta according to the packet instructions.
  2. Drain the juices from the tuna, sweetcorn, and mix all the ingredients together.
