Tortilla Pizzas

Serves 2

4 tortillas (wholemeal if you can, for extra fibre)

1 tin chopped tomatoes

1 sweet pepper (finely sliced so it cooks in time)

Cheese as desired

Salt and pepper to season

Other toppings as desired

Steps   

  1. Preheat the oven to 180°C (160 degrees fan).
  2. Generously layer the tortillas with the tomatoes, leaving an inch around the edge uncovered, seasoning with salt and pepper. Add the peppers, cheese, and other toppings as desired, bake for 10 minutes or until the tortilla edges fold upwards and are golden brown.
  3. Serve hot and enjoy!

Egg fried rice

Serves 2

150g leftover rice (more if hungry)

1 small onion, diced

3 medium-sized eggs

100g frozen vegetables (carrots, peas, sweetcorn are great – you can also use

tinned  vegetables)

100g diced tofu

Steps

  1. Add the diced onion to an oiled pan on medium heat, cooking until golden brown.
  2. Pour the frozen vegetables in, adding a little water if needed to prevent them sticking to the pan.
  3. Crack the eggs into a bowl, and stir with a fork. Once the pan is piping hot, add the eggs and quickly fry the eggs.
  4. Add in the cooked rice, season to taste.
  5. Enjoy!
